Mango Rice Pudding

Ingredients

  • Water: 2 cups
  • Salt: 1/4 tsp
  • Uncooked long grain brown rice: 1 cup
  • Ripe mango: 1 medium
  • Vanilla soy milk: 1 cup
  • Sugar: 2 tbsp
  • Ground cinnamon: 1/2 tsp
  • Vanilla extract: 1 tsp
  • Chopped peeled mango, optional

Method Steps

In a large heavy saucepan, boil water and salt.

Add rice, stir and reduce heat to allow simmering.

Cover the rice, cook for 35-40 minutes or until water is absorbed and rice is tender.

Peel, seed and slice mango. Smash mango with a potato masher or fork.

Add milk, sugar, cinnamon and mashed mango into rice. Cook, uncovered, on low flame for 10-15 minutes or until liquid is almost absorbed. Stir occasionally.

Turn off the flame, add vanilla extract and mix well.

Serve warm or cold, with chopped mango if desired
