Tomato Green Bean Soup

Ingredients

  • Chopped onion: 1 cup
  • Chopped carrots: 1 cup
  • Butter: 2 tsp
  • Vegetable broth: 6 cups
  • Fresh green beans, cut into 1-inch pieces: 400 g
  • Garlic minced: 1 clove
  • Diced fresh tomatoes: 3 cups
  • Minced fresh basil: 1/4 cup
  • Salt: 1/2 tsp
  • Pepper: 1/4 tsp

Method Steps

In a large heavy saucepan, saute onion and carrots in butter for 5 minutes.

Add the broth, beans and garlic; bring to a boil.

Reduce heat; cover and simmer for 20 minutes or until vegetables are tender.

Add tomatoes, basil, salt and pepper. Cover and simmer for 5 more minutes.
